Rob DeLaurentis, a restaurant manager, and chef Lou DiMauro wanted to open a restaurant together, and spent time searching for "the right" Bergen County location.
The two friends wanted it to be near DiMauro's previous restaurant in Midland Park to attract his former customers. They found their spot in Fair Lawn at the former site of Campania, an Italian restaurant featured on Gordon Ramsey's "Kitchen Nightmares" television show. It closed in early 2011, just a few months after the suicide of its chef.
