A New Year's toast is often a muddied concoction of emotion and overindulgence. That vintage Champagne you plan on sharing sparingly among a half dozen friends or so probably won't get quite the attention it deserves. And to be honest, it probably isn't the best choice of bubbly to begin with anyway.
The rich, creamy texture of an age-worthy Champagne is actually at a disadvantage in times like this. The evening's many flavors of food and libation left on the tongue coupled with teary-eyed excitement would fare better with something youthful, bright, and fruit forward.
